For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup honey
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup long-grain white rice
  • 2 cups water
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon lime zest
  • 1 large avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • Lime wedges for serving

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together honey, lime juice, olive oil, garlic, cumin, salt, and pepper. Pour half of the mixture over the chicken in a shallow dish; refrigerate for at least 20 minutes. Reserve the remaining half.
  2. In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes until tender. Fluff with a fork, then stir in cilantro and lime zest. Set aside.
  3. Heat a grill or skillet over medium-high heat. Cook the chicken for 5-7 minutes per side until cooked through and lightly charred. Let rest for 5 minutes, then slice into strips. Drizzle with reserved honey-lime mixture.
  4. In a small bowl, gently combine diced avocado, cherry tomatoes, and red onion. Season with a pinch of salt.
  5. To assemble, place a scoop of cilantro-lime rice on a plate. Top with sliced chicken and avocado mixture. Serve with lime wedges.

Notes

You can customize the seasonings to taste. For extra heat, add a pinch of cayenne to the marinade. This dish is also delicious served over greens instead of rice.
