For the Crust:
- 4 salmon fillets (6 oz each)
- 2 tbsp honey
- 2 tbsp Dijon mustard
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 4 medium carrots, peeled and sliced
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp maple syrup
- 1 tbsp melted butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, mix honey, Dijon mustard, olive oil, garlic powder, and paprika to make the glaze. Brush over salmon fillets.
- Toss carrots and sweet potatoes with maple syrup, melted butter, salt, and pepper. Spread on baking sheet.
- Place salmon on baking sheet with vegetables. Bake for 15-20 minutes until salmon flakes easily and vegetables are tender.
- Garnish with fresh parsley and serve warm.
