For the Crust:
- 1 pound fresh strawberries, hulled and halved
- 3 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1/2 cup mascarpone cheese
- 1/2 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup shelled pistachios
- 1/4 cup granulated sugar
- 1 tablespoon water
- Pinch of sea salt
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). In a bowl, toss strawberries with honey and balsamic vinegar. Spread on a baking sheet lined with parchment paper and roast for 15-20 minutes until soft and slightly caramelized.
- While strawberries roast, prepare praline. In a small saucepan over medium heat, combine granulated sugar and water. Cook without stirring until golden amber, about 5-7 minutes. Stir in pistachios and salt, then pour onto a parchment-lined baking sheet. Let cool completely, then break into pieces.
- In a mixing bowl, combine mascarpone, heavy cream, powdered sugar, and vanilla extract. Whip with an electric mixer until soft peaks form.
- To assemble, spread whipped mascarpone mixture onto a serving platter or individual plates to form a plank shape.
- Arrange honey-roasted strawberries over the mascarpone plank.
- Sprinkle crushed pistachio praline over the top. Serve immediately.
Notes
You can customize the seasonings to taste. For a vegan version, use coconut cream instead of mascarpone and heavy cream, and replace honey with agave syrup.
