For the Crust:
- 1 large ripe pineapple
- 8 oz block feta cheese
- 1/4 cup honey
- 1–2 teaspoons crushed red pepper flakes
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Fresh mint or basil for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat grill to medium-high heat.
- Peel the pineapple and cut into 1-inch cubes. Cut the feta into similar 1-inch cubes.
- In a small bowl, mix honey and crushed red pepper flakes to create the hot honey. Set aside.
- In a separate bowl, toss pineapple cubes with olive oil, salt, and pepper.
- Thread pineapple cubes onto skewers. Reserve the feta (do not skewer).
- Grill pineapple skewers for 3-4 minutes per side, until char marks appear.
- Remove pineapple from skewers and let cool slightly. Gently toss with feta cubes.
- Drizzle the hot honey over the pineapple and feta. Garnish with fresh mint or basil if desired.
Notes
You can customize the seasonings to taste. For milder heat, use less red pepper flakes; for extra spice, add a pinch of cayenne to the honey.
