For the Crust:
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1 tbsp hot honey
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 1/4 cup crumbled feta cheese
- 1/4 cup walnuts, toasted and chopped
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, hot honey, smoked paprika, salt, and pepper on a baking sheet.
- Roast for 25-30 minutes until tender and caramelized, stirring halfway.
- Transfer to a serving dish, top with feta, walnuts, and parsley. Serve warm.
