For the Crust:
- 2 1/4 cups all-purpose flour
- 1/2 cup mashed ripe banana
- 1/4 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 cup warm milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/2 tsp salt
- 1/4 cup packed brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp unsalted butter, softened
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1–2 tbsp milk (for frosting)
Instructions
1. Prepare the Crust:
- In a small bowl, dissolve yeast in warm milk with a pinch of sugar; let stand 5-10 minutes until frothy.
- In a large bowl, combine flour, mashed banana, granulated sugar, melted butter, egg, salt, and yeast mixture. Mix until a soft dough forms.
- Knead dough on a floured surface for about 5 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled.
- Punch down dough. Roll out on a floured surface into a 12×8 inch rectangle.
- In a small bowl, mix brown sugar and cinnamon. Spread softened butter over dough, then sprinkle cinnamon-sugar mixture evenly.
- Starting from a long side, roll dough tightly into a log. Cut into 12 equal slices.
- Place slices in a greased 9×13 inch baking dish. Cover and let rise for 30 minutes.
- Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown.
- While rolls bake, beat cream cheese, powdered sugar, vanilla, and milk until smooth. Spread frosting over warm rolls. Serve warm.
