For the Crust:
- 1 lb boneless, skinless chicken thighs, thinly sliced
- 4 large pita breads
- 1 cup plain Greek yogurt
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- Salt and black pepper to taste
- 1 large tomato, diced
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- Fresh parsley, chopped
Instructions
1. Prepare the Crust:
- In a bowl, mix yogurt, lemon juice, olive oil, garlic, cumin, paprika, turmeric, cinnamon, salt, and pepper to create the marinade.
- Add chicken slices to the marinade, coat evenly, cover, and refrigerate for at least 2 hours or overnight.
- Preheat grill or grill pan to medium-high heat. Grill chicken for 5-7 minutes per side until cooked through and slightly charred.
- Warm pita breads on the grill for 30 seconds per side until soft and pliable.
- Assemble wraps by placing grilled chicken, tomato, cucumber, red onion, and parsley in the center of each pita.
- Drizzle with extra yogurt or tahini sauce if desired, then fold and serve immediately.
