For the Crust:
- 1 whole chicken (about 4 lbs), patted dry
- 1.5 lbs baby potatoes, halved
- 1 lb fresh green beans, trimmed
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 1 lemon, sliced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). In a small bowl, mix 2 tbsp olive oil, garlic, rosemary, thyme, salt, and pepper.
- Rub the herb mixture all over the chicken, including under the skin. Place lemon slices inside the cavity.
- Toss baby potatoes and green beans with remaining 1 tbsp olive oil in a large roasting pan. Place chicken on top.
- Roast for 60-70 minutes until chicken reaches 165°F (74°C) and potatoes are golden. Let chicken rest 10 minutes before carving.
- Serve chicken with potatoes and green beans, drizzled with pan juices.
