For the Crust:
- 8 oz white chocolate, finely chopped
- 1/4 cup heavy cream
- 2 tbsp key lime juice
- 1 tsp key lime zest
- Pinch of salt
- 1/2 cup graham cracker crumbs (for coating)
- Optional: extra zest for garnish
Instructions
1. Prepare the Crust:
- Place white chocolate in a heatproof bowl.
- Heat heavy cream in a small saucepan until just simmering, then pour over chocolate. Let sit 1 minute, then stir until smooth.
- Stir in key lime juice, zest, and salt until fully combined. Chill mixture in refrigerator for 30 minutes or until firm enough to scoop.
- Line a baking sheet with parchment paper. Scoop tablespoon-sized portions and roll into balls.
- Roll each truffle in graham cracker crumbs until coated. Place on prepared sheet.
- Refrigerate for at least 1 hour before serving. Garnish with extra zest if desired.
