Tangy and sweet no-bake truffles made with key lime juice and white chocolate, perfect for a quick dessert.

For the Crust:

  • 8 oz white chocolate, finely chopped
  • 1/4 cup heavy cream
  • 2 tbsp key lime juice
  • 1 tsp key lime zest
  • Pinch of salt
  • 1/2 cup graham cracker crumbs (for coating)
  • Optional: extra zest for garnish

Instructions

1. Prepare the Crust:

  1. Place white chocolate in a heatproof bowl.
  2. Heat heavy cream in a small saucepan until just simmering, then pour over chocolate. Let sit 1 minute, then stir until smooth.
  3. Stir in key lime juice, zest, and salt until fully combined. Chill mixture in refrigerator for 30 minutes or until firm enough to scoop.
  4. Line a baking sheet with parchment paper. Scoop tablespoon-sized portions and roll into balls.
  5. Roll each truffle in graham cracker crumbs until coated. Place on prepared sheet.
  6. Refrigerate for at least 1 hour before serving. Garnish with extra zest if desired.

Notes

Store in refrigerator for best texture. You can customize the seasonings to taste.
