For the Crust:
- 4 ripe peaches, peeled and diced
- 2 tablespoons honey
- 1 teaspoon dried lavender buds
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 12 wonton wrappers
- 2 tablespoons melted butter
- 1 tablespoon granulated sugar
- Fresh mint leaves for garnish
- Optional: whipped cream or Greek yogurt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Brush wonton wrappers lightly with melted butter, press into muffin tin cups, and sprinkle with a pinch of sugar. Bake for 8-10 minutes until golden and crisp. Let cool.
- In a small saucepan, heat honey, lavender buds, and lemon juice over low heat for 3-5 minutes, stirring occasionally. Remove from heat and let steep for 10 minutes. Strain out lavender buds.
- In a bowl, gently toss diced peaches with vanilla extract. Spoon peach mixture into cooled wonton cups.
- Drizzle lavender honey over each peach cup. Garnish with fresh mint leaves. Serve immediately, optionally with whipped cream.
Notes
You can customize the seasonings to taste. For a stronger lavender flavor, let the honey steep longer.
