Description
A refreshing and unique frozen treat combining sweet mango, tart strawberry, and salty feta on skewers, drizzled with a frozen hot honey that starts sweet and finishes with a kick of heat.
Ingredients
For the Crust:
- 2 ripe mangoes, peeled and cut into 1-inch cubes
- 1 pound fresh strawberries, hulled and halved
- 8 ounces feta cheese, cut into 1/2-inch cubes (block feta, not crumbled)
- 1/4 cup honey
- 1 teaspoon red pepper flakes (or more to taste)
- 8–12 short wooden skewers (soaked in water for 30 minutes if using wooden)
Instructions
1. Prepare the Crust:
- Freeze the skewers: Thread mango cubes, strawberry halves, and feta cubes onto the skewers, alternating ingredients. Place skewers on a baking sheet lined with parchment paper and freeze for at least 4 hours, or until completely solid.
- Make the frozen hot honey: In a small saucepan, combine honey and red pepper flakes. Heat over low heat for 2-3 minutes, stirring gently, until honey is warm and infused with spice. Remove from heat and let cool slightly. Pour the honey into a shallow dish and freeze for about 30 minutes, or until thick and syrupy (but not solid). Alternatively, you can use a silicone ice cube tray to freeze individual dollops.
- Assemble: Remove frozen skewers from the freezer. Drizzle or dip the skewers in the frozen hot honey, or spoon the honey over the top.
- Serve immediately, as the skewers will melt quickly. Enjoy the contrast of cold, creamy, sweet, and spicy!
Notes
You can customize the seasonings to taste. For less heat, use only 1/2 teaspoon of red pepper flakes. For a vegan version, substitute feta with a firm vegan cheese like plant-based feta or smoked tofu. The frozen hot honey will not freeze solid like ice; it should be thick and syrupy. If it becomes too solid, let it sit at room temperature for a minute or two.
