Refreshing summer appetizer with sweet mango, juicy strawberries, and creamy feta cheese, drizzled with a tangy lime basil glaze.

For the Crust:
- 1 ripe mango, peeled and cut into 1-inch cubes
- 1 pint fresh strawberries, hulled and halved if large
- 8 oz block feta cheese, cut into 1-inch cubes
- Fresh basil leaves (about 24 large leaves)
- 1/4 cup fresh lime juice
- 2 tablespoons honey
- 2 tablespoons olive oil
- 1/4 cup fresh basil leaves, finely chopped
- Salt and pepper to taste
- 12 short wooden skewers, soaked in water for 30 minutes
Instructions
1. Prepare the Crust:
- Prepare the lime basil glaze: In a small bowl, whisk together lime juice, honey, olive oil, and chopped basil. Season with salt and pepper. Set aside.
- Assemble the skewers: For each skewer, thread a basil leaf, then a cube of mango, another basil leaf, a strawberry, another basil leaf, and a cube of feta. Repeat for remaining skewers.
- Arrange skewers on a serving platter and drizzle with the lime basil glaze. Serve immediately or chill for up to 1 hour before serving.
Notes
You can customize the seasonings to taste. For a spicier twist, add a pinch of red pepper flakes to the glaze.
