Refreshing summer appetizer with sweet mango, juicy strawberries, and creamy feta cheese, drizzled with a tangy lime basil glaze.

For the Crust:

  • 1 ripe mango, peeled and cut into 1-inch cubes
  • 1 pint fresh strawberries, hulled and halved if large
  • 8 oz block feta cheese, cut into 1-inch cubes
  • Fresh basil leaves (about 24 large leaves)
  • 1/4 cup fresh lime juice
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil leaves, finely chopped
  • Salt and pepper to taste
  • 12 short wooden skewers, soaked in water for 30 minutes

Instructions

1. Prepare the Crust:

  1. Prepare the lime basil glaze: In a small bowl, whisk together lime juice, honey, olive oil, and chopped basil. Season with salt and pepper. Set aside.
  2. Assemble the skewers: For each skewer, thread a basil leaf, then a cube of mango, another basil leaf, a strawberry, another basil leaf, and a cube of feta. Repeat for remaining skewers.
  3. Arrange skewers on a serving platter and drizzle with the lime basil glaze. Serve immediately or chill for up to 1 hour before serving.

Notes

You can customize the seasonings to taste. For a spicier twist, add a pinch of red pepper flakes to the glaze.
