For the Crust:
- 1 large ripe mango, cut into 1-inch cubes
- 1 pint fresh strawberries, hulled and halved
- 8 oz block feta cheese, cut into 1-inch cubes
- Fresh basil leaves for garnish
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons honey
- 1/4 cup fresh basil leaves, finely chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 12 wooden skewers, soaked in water for 30 minutes
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together lime juice, honey, chopped basil, olive oil, salt, and pepper to create the glaze. Set aside.
- Thread mango cubes, strawberry halves, and feta cubes onto skewers, alternating ingredients.
- Place skewers on a serving platter and drizzle with the lime basil glaze.
- Garnish with fresh basil leaves and serve immediately or chill for 30 minutes for a cooler flavor.
Notes
You can customize the seasonings to taste. For a bolder flavor, add a pinch of chili flakes to the glaze.
