Description

Soft and chewy chocolate chip cookies studded with sweet maraschino cherries and rich chocolate chunks.

For the Crust:

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup maraschino cherries, drained and chopped
  • 1/4 cup maraschino cherry juice (from the jar)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and maraschino cherry juice.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture and mix until just combined.
  5. Fold in the chocolate chips and chopped maraschino cherries until evenly distributed.
  6. Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 9 to 11 minutes, or until the edges are golden brown and the centers are set.
  8. Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

You can customize the seasonings to taste. For a more intense cherry flavor, add 1/2 teaspoon almond extract along with the vanilla.
