For the Crust:
- 8 oz block of feta cheese
- 1 cup cherry tomatoes, halved
- 1/3 cup kalamata olives, pitted and halved
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley for garnish
- Pita bread, cut into wedges and toasted
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Place the block of feta cheese in the center of a small baking dish or oven-safe skillet.
- Surround the feta with halved cherry tomatoes and olives.
- Drizzle olive oil over the cheese and vegetables. Sprinkle minced garlic, oregano, red pepper flakes, salt, and pepper.
- Bake for 20-25 minutes, until the feta is soft and beginning to brown on top.
- Remove from oven and let cool slightly. Garnish with fresh parsley.
- Serve warm with toasted pita wedges for dipping.
