For the Crust:
- 1 cup orzo pasta
- 2 cups mixed vegetables (zucchini, bell peppers, red onion, cherry tomatoes)
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss vegetables with 2 tablespoons olive oil, oregano, paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
- Cook orzo according to package directions until al dente. Drain and set aside.
- In a large bowl, combine cooked orzo, roasted vegetables, remaining olive oil, garlic, lemon juice, and parsley. Gently stir in feta cheese. Adjust seasoning and serve warm.
