For the Crust:
- 4 large flour tortillas
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 cup shredded mozzarella cheese
- 1/4 red onion, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, mix spinach, feta, mozzarella, red onion, oregano, garlic powder, salt, and pepper until combined.
- Heat olive oil in a large skillet over medium heat. Place one tortilla in the skillet.
- Spread half of the cheese mixture evenly over the tortilla, then top with another tortilla.
- Cook for 3-4 minutes per side, until golden brown and cheese is melted. Repeat with remaining tortillas and filling.
- Slice each quesadilla into wedges and serve warm.
