A quick and cheesy casserole combining seasoned ground beef, Rotel tomatoes, creamy soup, and crunchy Doritos for a crowd-pleasing weeknight dinner.

For the Crust:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1/2 cup milk
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 cups Nacho Cheese Doritos (crushed lightly)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F. Grease a 9×13-inch baking dish.
- In a large skillet over medium-high heat, cook ground beef, onion, and garlic until beef is browned and onion is soft. Drain fat.
- Stir in Rotel (undrained), cream of mushroom soup, sour cream, 1 cup of shredded cheese, milk, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
- Spread half of the crushed Doritos in the bottom of the prepared baking dish. Top with half of the beef mixture. Repeat layers with remaining Doritos and beef mixture.
- Sprinkle remaining 1 cup of shredded cheddar cheese over the top.
- Bake for 25-30 minutes, until bubbly and cheese is melted. Let stand 5 minutes before serving.
Notes
You can customize the seasonings to taste. For extra heat, add a diced jalapeño or use Hot Rotel.
