Description

A quick and cheesy casserole combining seasoned ground beef, Rotel tomatoes, creamy soup, and crunchy Doritos for a crowd-pleasing weeknight dinner.


Ingredients

For the Crust:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup milk
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 4 cups Nacho Cheese Doritos (crushed lightly)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, cook ground beef, onion, and garlic until beef is browned and onion is soft. Drain fat.
  3. Stir in Rotel (undrained), cream of mushroom soup, sour cream, 1 cup of shredded cheese, milk, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  4. Spread half of the crushed Doritos in the bottom of the prepared baking dish. Top with half of the beef mixture. Repeat layers with remaining Doritos and beef mixture.
  5. Sprinkle remaining 1 cup of shredded cheddar cheese over the top.
  6. Bake for 25-30 minutes, until bubbly and cheese is melted. Let stand 5 minutes before serving.

Notes

You can customize the seasonings to taste. For extra heat, add a diced jalapeño or use Hot Rotel.
