Description

A deliciously cheesy, hearty casserole with seasoned ground beef, corn, black beans, and crushed tortilla chips, baked to perfection. Perfect for a quick weeknight dinner.

For the Crust:

  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel)
  • 1 packet (1 oz) taco seasoning
  • 2 cups shredded Mexican blend cheese
  • 2 cups crushed tortilla chips
  • 1/2 cup sour cream (optional)
  • 1/2 cup chopped green onions for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and diced tomatoes with green chilies; stir and cook for 2-3 minutes.
  4. Add black beans and corn; stir to combine. Remove from heat.
  5. Spread a layer of crushed tortilla chips on the bottom of the baking dish.
  6. Spoon the beef mixture over the chips. Top with half of the shredded cheese.
  7. Layer remaining crushed chips on top, then add the rest of the cheese.
  8. Bake uncovered for 20-25 minutes, until bubbly and cheese is melted.
  9. Let cool for 5 minutes. Garnish with sour cream and green onions if desired. Serve hot.

Notes

You can customize the seasonings to taste. For extra spice, add a chopped jalapeño or use hot Rotel. For a lighter version, use ground turkey.
