A rich and creamy no-bake pie with layers of chocolate and cherry. Perfect for summer desserts without turning on the oven.

For the Crust:
- 1 ½ cups chocolate cookie crumbs
- 6 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 (21 oz) can cherry pie filling
- ½ cup semi-sweet chocolate chips (optional for garnish)
Instructions
1. Prepare the Crust:
- In a medium bowl, combine chocolate cookie crumbs and melted butter. Press mixture evenly into the bottom and up the sides of a 9-inch pie dish. Refrigerate for 20 minutes to set.
- In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
- In a separate chilled bowl, whip the heavy cream to stiff peaks. Fold the whipped cream gently into the cream cheese mixture until combined.
- Spread half of the cream cheese mixture over the crust. Spoon half of the cherry pie filling on top. Repeat layers with remaining cream cheese mixture and cherry pie filling.
- Refrigerate for at least 4 hours or until firm. Garnish with chocolate shavings or chips if desired. Serve chilled.
Notes
You can customize the seasonings to taste. For a lighter version, use reduced-fat cream cheese and sugar substitute. This pie keeps well in the fridge for up to 3 days.
