Description

A perfectly balanced roast chicken with crispy skin and tender meat, ideal for a family dinner or special occasion.

For the Crust:

  • 1 whole chicken (approx. 4 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1 lemon, quartered
  • 4 garlic cloves, smashed
  • 2 sprigs fresh rosemary

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Pat the chicken dry with paper towels.
  2. In a small bowl, mix olive oil, salt, pepper, paprika, garlic powder, and thyme.
  3. Rub the spice mixture all over the chicken, including under the skin.
  4. Place lemon quarters, garlic cloves, and rosemary inside the cavity.
  5. Truss the chicken with kitchen twine and place on a roasting pan.
  6. Roast for 60–70 minutes, or until internal temperature reaches 165°F (74°C) in the thigh.
  7. Let rest for 10–15 minutes before carving.

Notes

You can customize the seasonings to taste. For extra crispiness, broil for the last 3–4 minutes.
