A refreshing summer salad featuring juicy peaches, sweet watermelon, and creamy feta cheese, all drizzled with a spicy-sweet honey-mint sauce.

For the Crust:
- 2 ripe peaches, pitted and cubed
- 2 cups seedless watermelon, cubed
- 1/2 cup feta cheese, cubed
- 3 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon red pepper flakes (adjust to taste)
- 2 tablespoons fresh mint leaves, thinly sliced
- Salt to taste
Instructions
1. Prepare the Crust:
- In a small saucepan, combine honey, apple cider vinegar, and red pepper flakes. Heat over low heat until honey thins, about 2 minutes. Remove from heat and stir in mint. Let cool slightly.
- In a serving bowl, gently combine peach cubes, watermelon cubes, and feta cubes.
- Drizzle the honey-mint mixture over the fruit and feta. Toss gently to coat.
- Season with a pinch of salt and serve immediately.
Notes
You can customize the seasonings to taste. Add more red pepper flakes for extra heat, or swap mint for basil if preferred.
