Description

A refreshing summer salad featuring juicy peaches, sweet watermelon, and creamy feta cheese, all drizzled with a spicy-sweet honey-mint sauce.


Ingredients

For the Crust:

  • 2 ripe peaches, pitted and cubed
  • 2 cups seedless watermelon, cubed
  • 1/2 cup feta cheese, cubed
  • 3 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons fresh mint leaves, thinly sliced
  • Salt to taste

Instructions

1. Prepare the Crust:

  1. In a small saucepan, combine honey, apple cider vinegar, and red pepper flakes. Heat over low heat until honey thins, about 2 minutes. Remove from heat and stir in mint. Let cool slightly.
  2. In a serving bowl, gently combine peach cubes, watermelon cubes, and feta cubes.
  3. Drizzle the honey-mint mixture over the fruit and feta. Toss gently to coat.
  4. Season with a pinch of salt and serve immediately.

Notes

You can customize the seasonings to taste. Add more red pepper flakes for extra heat, or swap mint for basil if preferred.
