For the Crust:
- 2 ripe peaches, pitted and sliced
- 1 cup fresh raspberries
- 1 cup fresh blueberries
- 1 cup fresh strawberries, hulled and halved
- 1/4 cup honey
- 2 tablespoons fresh lime juice
- 1 tablespoon finely chopped fresh mint
- 1/2 cup chopped walnuts
- 1 tablespoon unsalted butter
- 1 tablespoon brown sugar
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together honey, lime juice, and chopped mint to make the dressing. Set aside.
- In a small skillet over medium heat, melt butter. Add chopped walnuts and brown sugar, stirring frequently until walnuts are toasted and coated, about 3-4 minutes. Remove from heat and let cool.
- In a large bowl, combine sliced peaches, raspberries, blueberries, and strawberries.
- Pour the honey-lime mint dressing over the fruit and gently toss to coat.
- Divide the berry mixture into serving bowls. Sprinkle each with the toasted walnut crunch and serve immediately.
Notes
You can customize the seasonings to taste. For extra flavor, add a pinch of salt to the walnut crunch.
