A vibrant and refreshing fruit salad featuring juicy peaches and a medley of berries, tossed in a sweet and tangy honey-lime mint dressing and topped with a crunchy walnut crumble.

For the Crust:

  • 2 ripe peaches, pitted and sliced
  • 1 cup fresh raspberries
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, hulled and halved
  • 1/4 cup honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon finely chopped fresh mint
  • 1/2 cup chopped walnuts
  • 1 tablespoon unsalted butter
  • 1 tablespoon brown sugar

Instructions

1. Prepare the Crust:

  1. In a small bowl, whisk together honey, lime juice, and chopped mint to make the dressing. Set aside.
  2. In a small skillet over medium heat, melt butter. Add chopped walnuts and brown sugar, stirring frequently until walnuts are toasted and coated, about 3-4 minutes. Remove from heat and let cool.
  3. In a large bowl, combine sliced peaches, raspberries, blueberries, and strawberries.
  4. Pour the honey-lime mint dressing over the fruit and gently toss to coat.
  5. Divide the berry mixture into serving bowls. Sprinkle each with the toasted walnut crunch and serve immediately.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of salt to the walnut crunch.
