For the Crust:

  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup sweetened shredded coconut
  • 1 (8 oz) block cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 cup toasted coconut flakes for garnish (optional)

Instructions

1. Prepare the Crust:

  1. In a large bowl, beat the cream cheese and powdered sugar until smooth.
  2. Add the vanilla extract and mix well.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture until combined.
  5. Gently fold in the drained crushed pineapple and shredded coconut.
  6. Spoon the mixture into individual serving cups or a pie dish.
  7. Refrigerate for at least 2 hours, until set.
  8. Garnish with toasted coconut flakes before serving.
