For the Crust:
- 1 pound (about 8 medium) carrots, peeled and halved lengthwise
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1/4 cup shelled pistachios, finely chopped
- 1/4 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- For the Whipped Feta:
- 6 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Fresh dill or mint (optional)
- For the Cranberry Drizzle:
- 1/2 cup dried cranberries
- 1/4 cup orange juice
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- Pinch of salt
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss carrot halves with olive oil, salt, and pepper. Roast for 15–20 minutes until just tender but not soft.
- Meanwhile, combine chopped pistachios, panko, Parmesan, garlic powder, and thyme in a shallow dish. Prepare two additional shallow dishes: one with flour, one with beaten eggs.
- Working with one carrot at a time, dip in flour, then egg, then press into pistachio mixture to coat evenly. Place on a clean plate.
- Return coated carrots to the baking sheet (lined with fresh parchment if needed) and roast for another 10–12 minutes until golden and crisp.
- For the whipped feta: blend feta, yogurt, olive oil, and lemon juice in a food processor until smooth and creamy. Season with pepper and stir in fresh herbs if using.
- For the drizzle: combine cranberries, orange juice, honey, balsamic vinegar, and salt in a small saucepan. Simmer over medium heat for 5–7 minutes until cranberries are plump and liquid thickens slightly. Let cool, then blend briefly for a smoother drizzle.
- Thread each pistachio-crusted carrot half onto a short skewer. Serve with whipped feta and a drizzle of cranberry sauce on the side.
Notes
You can customize the seasonings to taste. For a spicier kick, add a pinch of cayenne to the pistachio crust. The whipped feta can be made a day ahead and chilled.
