For the Crust:
- 1 large head cauliflower, cut into florets
- 1 cup shelled pistachios, finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1/4 cup honey
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- Wooden skewers, soaked in water for 30 minutes
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, mix chopped pistachios, breadcrumbs, Parmesan, garlic, smoked paprika, salt, and pepper.
- Toss cauliflower florets in olive oil, then roll in the pistachio mixture to coat evenly.
- Thread coated cauliflower onto soaked skewers, placing them on the prepared baking sheet.
- Bake for 20-25 minutes, flipping halfway, until golden and crispy.
- While baking, whisk honey, lemon juice, and lemon zest in a small bowl.
- Drizzle lemon honey over skewers before serving warm.
