Description

Crispy, nutty cauliflower florets coated in a savory pistachio crust, skewered and baked until golden, then drizzled with a zesty lemon honey glaze for a delightful appetizer or side dish.

For the Crust:

  • 1 large head cauliflower, cut into florets
  • 1 cup shelled pistachios, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • Wooden skewers, soaked in water for 30 minutes

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix chopped pistachios, breadcrumbs, Parmesan, garlic, smoked paprika, salt, and pepper.
  3. Toss cauliflower florets in olive oil, then roll in the pistachio mixture to coat evenly.
  4. Thread coated cauliflower onto soaked skewers, placing them on the prepared baking sheet.
  5. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  6. While baking, whisk honey, lemon juice, and lemon zest in a small bowl.
  7. Drizzle lemon honey over skewers before serving warm.
