- 4 ounces brie cheese, sliced into small pieces
- 1/4 cup whole berry cranberry sauce
- 1/4 cup pecans, roughly chopped
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss beet rounds with olive oil, salt, and pepper, then arrange on a baking sheet in a single layer.
- Roast for 25-30 minutes until tender and slightly caramelized. Remove from oven and let cool slightly.
- Top each beet round with a piece of brie, a dollop of cranberry sauce, and a sprinkle of pecans. Garnish with thyme before serving.
