For the Crust:
- 1 lb rainbow carrots, trimmed and halved lengthwise
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup whole milk ricotta
- 1/4 cup heavy cream
- 1 tbsp lemon juice
- 1/4 cup honey
- 1/2 tsp red pepper flakes
- Fresh thyme or dill for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 20-25 minutes until tender and caramelized.
- While carrots roast, combine ricotta, heavy cream, and lemon juice in a food processor. Blend until smooth and fluffy, about 1-2 minutes. Set aside.
- In a small saucepan, warm honey and red pepper flakes over low heat for 3-4 minutes, stirring occasionally. Remove from heat and let cool slightly.
