For the Crust:
- 1 pre-made flatbread or pizza crust (about 12 inches)
- 1 cup fresh or frozen cranberries
- 2 tablespoons olive oil, divided
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 ounces goat cheese, crumbled
- 1/4 cup shredded mozzarella cheese
- 2 tablespoons balsamic glaze
- 2 tablespoons chopped fresh parsley (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, toss cranberries with 1 tablespoon olive oil, honey, salt, and pepper. Spread on the prepared baking sheet.
- Roast cranberries for 10-12 minutes until they begin to burst. Remove and set aside. Increase oven temperature to 425°F (220°C).
- Place flatbread on a clean baking sheet. Brush with remaining 1 tablespoon olive oil.
- Sprinkle mozzarella over the flatbread, then dot with roasted cranberries and crumbled goat cheese.
- Bake for 10-12 minutes until cheese is melted and crust is golden.
- Remove from oven, drizzle with balsamic glaze, and garnish with parsley if desired. Slice and serve warm.
Notes
You can customize the seasonings to taste. For extra flavor, add a sprinkle of fresh thyme or rosemary before baking.
