Tender roasted carrots glazed in garlic butter, paired with a tangy lemon feta sauce for a bright, savory side dish.

For the Crust:

  • 1 lb carrots, peeled and halved lengthwise
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tbsp plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix melted butter with minced garlic.
  3. Toss the carrots with the garlic butter, salt, and pepper on the baking sheet.
  4. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  5. While carrots roast, make the sauce: combine feta, Greek yogurt, lemon juice, and lemon zest in a food processor; blend until smooth.
  6. Drizzle the lemon feta sauce over the roasted carrots and garnish with fresh parsley.
