For the Crust:

  • 1 large ripe pear, cored and thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste
  • 1 baguette, sliced into 1/2-inch rounds
  • 4 ounces blue cheese, crumbled
  • 1/2 cup walnuts, roughly chopped and toasted
  • 2 tablespoons honey
  • Fresh thyme sprigs for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss pear slices with olive oil, thyme, salt, and pepper. Arrange on a baking sheet and roast for 10-12 minutes until tender and lightly caramelized.
  2. Place baguette slices on a separate baking sheet and toast in the oven for 5-7 minutes until crisp and golden.
  3. Assemble bites: Top each toasted baguette slice with a roasted pear slice, a sprinkle of blue cheese, and a few toasted walnuts.
  4. Drizzle each bite with honey and garnish with fresh thyme sprigs. Serve immediately.
