For the Crust:
- 2 slices sourdough bread
- 1 ripe avocado
- 2 large eggs
- 1 tablespoon olive oil
- Salt and black pepper to taste

Instructions
1. Prepare the Crust:
- Toast the sourdough bread slices until golden and crisp.
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork to your desired consistency. Season with salt, pepper, and a squeeze of lemon juice if desired.
- Heat olive oil in a non-stick skillet over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolks remain runny, about 3-4 minutes.
- Spread the mashed avocado evenly over each toast slice.
- Place a fried egg on top of each avocado toast. Sprinkle with salt, pepper, and red pepper flakes. Serve immediately.
