For the Crust:
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 cups broccoli florets
- 8 oz cremini mushrooms, sliced
- 1 cup white rice, uncooked
- 2 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Green onions, sliced for garnish
Instructions
1. Prepare the Crust:
- Cook rice according to package instructions and set aside.
- Heat vegetable oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until browned and cooked through, about 6-8 minutes. Remove and set aside.
- In the same skillet, add mushrooms and cook until softened, about 5 minutes. Add broccoli and garlic, cooking for another 3-4 minutes until broccoli is tender-crisp.
- Return chicken to the skillet. Stir in soy sauce, oyster sauce, and sesame oil, tossing to coat everything evenly. Cook for 1-2 minutes until heated through.
- Divide rice among bowls, top with the chicken and vegetable mixture, and garnish with green onions.
