For the Crust:
- 4 large lemons
- 1 cup granulated sugar
- 1/2 cup water
- 8 oz mascarpone cheese
- 1/2 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions
1. Prepare the Crust:
- Zest and juice the lemons. Combine lemon juice, sugar, and water in a saucepan; heat until sugar dissolves. Let cool.
- Pour lemon mixture into a shallow dish and freeze until solid, about 4 hours. Scrape with a fork to create shaved snow.
- In a bowl, whisk mascarpone, heavy cream, powdered sugar, vanilla, and salt until soft peaks form.
- Spoon the mascarpone cloud into serving dishes. Top with shaved frozen lemon and garnish with lemon zest.
