For the Crust:
- 12 oz fettuccine pasta
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes (oil-packed), chopped
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 tsp red pepper flakes
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Bring a large pot of salted water to a boil and cook fettuccine according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Stir in sun-dried tomatoes and cook for another minute. Add fresh spinach and cook until wilted, about 2-3 minutes.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.
- Add drained fettuccine to the skillet, tossing to coat in the sauce. If needed, add reserved pasta water a little at a time to reach desired consistency.
- Season with red pepper flakes, salt, and black pepper. Garnish with fresh basil before serving.
