For the Crust:
- 1 lb chicken breast, cut into strips
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin
- Salt and black pepper to taste
- 1 cup hummus
- 1 large cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1 tbsp lemon juice
- 2 cups cooked quinoa or rice
Instructions
1. Prepare the Crust:
- Season chicken with paprika, cayenne, cumin, salt, and pepper. Heat olive oil in a pan and cook chicken with minced garlic until golden and cooked through.
- In a bowl, combine cucumber, red onion, parsley, and lemon juice. Toss well to make the cucumber salad.
- Assemble bowls by dividing quinoa or rice among them. Top with spicy garlic chicken, a generous scoop of hummus, and the cucumber salad.
- Serve immediately and enjoy.
