For the Crust:

  • 1 lb chicken breast, cut into strips
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • 1 cup hummus
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp lemon juice
  • 2 cups cooked quinoa or rice

Instructions

1. Prepare the Crust:

  1. Season chicken with paprika, cayenne, cumin, salt, and pepper. Heat olive oil in a pan and cook chicken with minced garlic until golden and cooked through.
  2. In a bowl, combine cucumber, red onion, parsley, and lemon juice. Toss well to make the cucumber salad.
  3. Assemble bowls by dividing quinoa or rice among them. Top with spicy garlic chicken, a generous scoop of hummus, and the cucumber salad.
  4. Serve immediately and enjoy.
