For the Crust:
- 1 lb boneless, skinless chicken breast, sliced
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 tbsp olive oil
- Salt and black pepper to taste
- 1 cup hummus (store-bought or homemade)
- 1 cucumber, diced
- 1/4 cup cherry tomatoes, halved
- 2 tbsp lemon juice
- 2 tbsp chopped fresh parsley
- Cooked rice or quinoa for serving
Instructions
1. Prepare the Crust:
- In a bowl, combine chicken slices with minced garlic, paprika, cayenne, olive oil, salt, and pepper. Mix well and let marinate for 10 minutes.
- Heat a skillet over medium-high heat. Cook the chicken until golden and cooked through, about 6-8 minutes per side. Set aside.
- In a separate bowl, combine diced cucumber, cherry tomatoes, lemon juice, and parsley. Season with salt and pepper. Toss to combine.
- To serve, place a scoop of hummus on a plate, top with cucumber salad, and arrange spicy garlic chicken alongside. Serve with rice or quinoa.
