For the Crust:

  • 1 lb boneless, skinless chicken breast, sliced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1 cup hummus (store-bought or homemade)
  • 1 cucumber, diced
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp lemon juice
  • 2 tbsp chopped fresh parsley
  • Cooked rice or quinoa for serving

Instructions

1. Prepare the Crust:

  1. In a bowl, combine chicken slices with minced garlic, paprika, cayenne, olive oil, salt, and pepper. Mix well and let marinate for 10 minutes.
  2. Heat a skillet over medium-high heat. Cook the chicken until golden and cooked through, about 6-8 minutes per side. Set aside.
  3. In a separate bowl, combine diced cucumber, cherry tomatoes, lemon juice, and parsley. Season with salt and pepper. Toss to combine.
  4. To serve, place a scoop of hummus on a plate, top with cucumber salad, and arrange spicy garlic chicken alongside. Serve with rice or quinoa.

Notes

You can customize the seasonings to taste. For extra heat, add more cayenne or a dash of hot sauce.
