For the Crust:
- 8 oz pasta of choice
- 1 cup sun-dried tomatoes in oil, chopped
- 2 cups sliced mushrooms
- 4 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 1/2 cup vegetable broth
- Salt and pepper to taste
- Grated Parmesan for serving
Instructions
1. Prepare the Crust:
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and mushrooms, sauté until mushrooms are tender.
- Stir in sun-dried tomatoes and vegetable broth. Simmer for 5 minutes.
- Add cooked pasta and fresh basil to the skillet. Toss to coat evenly.
- Season with salt and pepper. Serve hot with grated Parmesan.
