A festive and flavorful appetizer featuring roasted sweet potato rounds topped with creamy feta, tart cranberries, and crunchy pecans.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon honey (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  4. Remove from oven and top each round with feta, cranberries, and pecans.
  5. Return to oven for 3-5 minutes until feta is slightly softened and pecans are toasted.
  6. Drizzle with honey (if using) and sprinkle with fresh thyme before serving.
