Description

These Sweet Potato Rounds with Feta, Cranberries, and Pecans are roasted until caramelized, then topped with tangy feta, sweet dried cranberries, and crunchy pecans for a festive, flavor-packed appetizer or side dish.


Ingredients

2 large sweet potatoes, sliced into 1/4-inch rounds

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/3 cup crumbled feta cheese

1/3 cup dried cranberries

1/3 cup chopped pecans, lightly toasted

1 tablespoon honey or maple syrup (optional drizzle)

1 tablespoon fresh thyme leaves or chopped parsley

Pinch of red pepper flakes (optional)


Instructions

1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.

2. Slice sweet potatoes into even 1/4-inch thick rounds for uniform cooking.

3. In a large bowl, toss the rounds with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated.

4. Arrange in a single layer on the prepared baking sheet without overlapping.

5. Roast for 20 minutes, flip each round, then roast another 10–15 minutes until golden and tender with crispy edges.

6. Remove from oven and let cool slightly.

7. Top each round with crumbled feta, dried cranberries, and toasted pecans.

8. Drizzle lightly with honey or maple syrup if desired.

9. Garnish with fresh thyme or parsley and a pinch of red pepper flakes before serving.

10. Serve warm as a holiday appetizer, party snack, or elegant side dish.

Notes

For extra crispiness, avoid overcrowding the pan and roast on the upper oven rack.

Toast pecans in a dry skillet over medium heat for 3–4 minutes until fragrant.

You can substitute goat cheese for feta for a creamier variation.

These can be pre-roasted and assembled just before serving.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
