For the Crust:
- 8 ounces mascarpone cheese, softened
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 2 tablespoons espresso or strong brewed coffee, cooled
- 1 teaspoon vanilla extract
- 1/4 cup cocoa powder, for dusting
- 24 ladyfinger cookies (savoiardi)
- Dark chocolate shavings, for garnish (optional)
Instructions
1. Prepare the Crust:
- In a large mixing bowl, beat the heavy cream with an electric mixer until stiff peaks form.
- In another bowl, combine the softened mascarpone, powdered sugar, cooled espresso, and vanilla extract. Mix until smooth and creamy.
- Gently fold the whipped cream into the mascarpone mixture until fully incorporated and fluffy.
- Divide the dip evenly among 4 small serving cups or ramekins.
- Dust the top of each dip with cocoa powder using a fine sieve, and garnish with dark chocolate shavings if desired.
- Arrange ladyfinger cookies on a plate alongside the dip cups for dipping. Serve immediately.
