For the Crust:
- 2 ripe mangoes, cubed
- 8 oz fresh mozzarella balls (bocconcini), halved
- 1/4 cup fresh basil leaves, large ones torn
- 2 tbsp honey
- 1 tbsp lime juice
- 1/2 tsp red pepper flakes (optional)
- Salt to taste
- 8 short skewers
Instructions
1. Prepare the Crust:
- In a small bowl, whisk together honey, lime juice, and red pepper flakes. Set aside.
- Thread a basil leaf, a mango cube, a mozzarella half, and another mango cube onto each skewer. Repeat until all ingredients are used.
- Place skewers on a serving plate and drizzle with the honey glaze. Sprinkle with a pinch of salt.
- Serve immediately or refrigerate for up to 30 minutes before serving.
