For the Crust:
- 2 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup heavy cream
- 2 tablespoons capers, drained (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5 minutes per side. Remove chicken and set aside.
- Reduce heat to medium. Add butter and garlic to the skillet; cook until fragrant, about 1 minute.
- Add chicken broth, lemon juice, and lemon zest. Bring to a simmer, scraping up any browned bits from the bottom.
- Stir in heavy cream and capers (if using). Return chicken to the skillet. Simmer for 5-7 minutes, or until chicken is cooked through and sauce thickens slightly.
- Garnish with fresh parsley before serving.
