Description

A delicious twist on classic meatball subs, featuring tender zucchini-infused meatballs smothered in marinara sauce and melted cheese on toasted sub rolls.


Ingredients

For the Crust:

  • 1 lb ground beef or turkey
  • 1 medium zucchini, grated and squeezed dry
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 4 sub rolls, split and toasted
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground meat, grated zucchini, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Shape the mixture into 16-20 meatballs and place on the prepared baking sheet. Bake for 20-25 minutes, or until cooked through.
  4. While meatballs bake, heat marinara sauce in a saucepan over medium heat until warmed through.
  5. Place 4-5 meatballs on each toasted sub roll, top with marinara sauce and shredded mozzarella. Broil for 2-3 minutes until cheese is melted and bubbly.
  6. Garnish with fresh basil if desired and serve immediately.

Notes

You can customize the seasonings to taste.
