For the Crust:
- 1 sheet frozen puff pastry, thawed
- 2 medium zucchinis, thinly sliced
- 1 cup feta cheese, crumbled
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 cup honey
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry and cut into 1-inch wide strips. Twist each strip into a ribbon shape and place on baking sheet. Bake for 15-20 minutes until golden and puffed.
- Toss zucchini slices with 1 tablespoon olive oil, salt, and pepper. Roast on a separate baking sheet for 10-12 minutes until tender.
- In a food processor, blend feta, Greek yogurt, lemon juice, garlic, and remaining olive oil until smooth and creamy.
- In a small saucepan, warm honey and red pepper flakes over low heat for 5 minutes to infuse. Let cool slightly.
- Spread whipped feta over cooled puff pastry ribbons, top with roasted zucchini, drizzle with hot honey, and garnish with thyme.
