Description

A savory and sweet appetizer featuring crispy puff pastry ribbons topped with creamy whipped feta, roasted zucchini, and a drizzle of spicy hot honey.

For the Crust:

  • 1 sheet frozen puff pastry, thawed
  • 2 medium zucchinis, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 cup honey
  • 1/2 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry and cut into 1-inch wide strips. Twist each strip into a ribbon shape and place on baking sheet. Bake for 15-20 minutes until golden and puffed.
  3. Toss zucchini slices with 1 tablespoon olive oil, salt, and pepper. Roast on a separate baking sheet for 10-12 minutes until tender.
  4. In a food processor, blend feta, Greek yogurt, lemon juice, garlic, and remaining olive oil until smooth and creamy.
  5. In a small saucepan, warm honey and red pepper flakes over low heat for 5 minutes to infuse. Let cool slightly.
  6. Spread whipped feta over cooled puff pastry ribbons, top with roasted zucchini, drizzle with hot honey, and garnish with thyme.
