For the Crust:
- 2 medium beetroots
- 8 oz goat cheese, softened
- 2 tablespoons cream cheese
- 1/3 cup walnuts, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 teaspoon fresh thyme leaves
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon honey
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Wrap beetroots in foil and roast for 45-60 minutes until tender. Cool, peel, and finely grate or mince.
- In a bowl, mix softened goat cheese, cream cheese, grated beetroot, honey, salt, and pepper until well combined.
- On a piece of plastic wrap, spread cheese mixture into a log shape. Roll up tightly and twist ends to form a compact log. Refrigerate for at least 2 hours.
- Combine chopped walnuts, parsley, chives, and thyme on a plate. Unwrap the cheese log and roll in the nut-herb mixture, pressing gently to adhere.
- Transfer to a serving platter, let sit at room temperature for 10 minutes, then serve with crackers or sliced baguette.
Notes
You can customize the seasonings to taste. For a milder flavor, substitute half the goat cheese with cream cheese.
