Description

A delightful appetizer combining creamy whipped feta, sweet and tangy roasted strawberries, a kick of black pepper, and spicy cranberry hot honey on crispy crostini.

For the Crust:

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 8 ounces feta cheese, crumbled
  • 1/4 cup Greek yogurt
  • 2 tablespoons honey
  • 1 pound strawberries, hulled and halved
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon freshly ground black pepper, plus more for garnish
  • 1/2 cup cranberry hot honey (store-bought or homemade)
  • Fresh mint leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Place baguette slices on a baking sheet, brush with olive oil, and bake for 8-10 minutes until golden and crispy. Set aside.
  2. In a food processor, combine feta cheese, Greek yogurt, and 2 tablespoons honey. Blend until smooth and creamy. Set aside.
  3. In a medium bowl, toss strawberries with balsamic vinegar and 1 teaspoon black pepper. Spread on a parchment-lined baking sheet and roast for 15-20 minutes until softened and slightly caramelized.
  4. To assemble, spread a generous layer of whipped feta on each crostini. Top with roasted strawberries, drizzle with cranberry hot honey, and garnish with additional black pepper and fresh mint leaves.
  5. Serve immediately as an appetizer or snack.

Notes

You can customize the seasonings to taste. For a milder heat, use less cranberry hot honey.
