A delightful appetizer combining creamy whipped feta, sweet and tangy roasted strawberries, a kick of black pepper, and spicy cranberry hot honey on crispy crostini.

For the Crust:
- 1 baguette, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 8 ounces feta cheese, crumbled
- 1/4 cup Greek yogurt
- 2 tablespoons honey
- 1 pound strawberries, hulled and halved
- 1 tablespoon balsamic vinegar
- 1 teaspoon freshly ground black pepper, plus more for garnish
- 1/2 cup cranberry hot honey (store-bought or homemade)
- Fresh mint leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place baguette slices on a baking sheet, brush with olive oil, and bake for 8-10 minutes until golden and crispy. Set aside.
- In a food processor, combine feta cheese, Greek yogurt, and 2 tablespoons honey. Blend until smooth and creamy. Set aside.
- In a medium bowl, toss strawberries with balsamic vinegar and 1 teaspoon black pepper. Spread on a parchment-lined baking sheet and roast for 15-20 minutes until softened and slightly caramelized.
- To assemble, spread a generous layer of whipped feta on each crostini. Top with roasted strawberries, drizzle with cranberry hot honey, and garnish with additional black pepper and fresh mint leaves.
- Serve immediately as an appetizer or snack.
Notes
You can customize the seasonings to taste. For a milder heat, use less cranberry hot honey.
