For the Crust:
- 2 cups cottage cheese
- 2 large eggs
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1 cup fresh strawberries, sliced
- Cooking spray or butter for greasing
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease four ramekins or a muffin tin with cooking spray or butter.
- In a blender or food processor, combine cottage cheese, eggs, honey, vanilla extract, and cinnamon. Blend until smooth.
- Pour the mixture evenly into the prepared ramekins or muffin cups.
- Bake for 20-25 minutes, or until the tops are golden and set.
- Let cool slightly, then top with fresh strawberry slices before serving.
