For the Crust:

  • 2 cups cottage cheese
  • 2 large eggs
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup fresh strawberries, sliced
  • Cooking spray or butter for greasing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease four ramekins or a muffin tin with cooking spray or butter.
  2. In a blender or food processor, combine cottage cheese, eggs, honey, vanilla extract, and cinnamon. Blend until smooth.
  3. Pour the mixture evenly into the prepared ramekins or muffin cups.
  4. Bake for 20-25 minutes, or until the tops are golden and set.
  5. Let cool slightly, then top with fresh strawberry slices before serving.
