Description
Juicy grilled peach rounds topped with creamy whipped brie, a drizzle of spicy hot honey, and a crunchy pistachio garnish. A perfect summer appetizer or light dessert.

For the Crust:
- 4 ripe but firm peaches, halved and pitted
- 8 oz Brie cheese, rind removed, softened
- 2 tablespoons heavy cream
- 3 tablespoons honey
- 1 teaspoon red pepper flakes (or to taste)
- 1/4 cup shelled pistachios, roughly chopped
- Salt to taste
- Fresh mint leaves for garnish (optional)
Instructions
1. Prepare the Crust:
- Prepare the hot honey: In a small bowl, mix honey and red pepper flakes. Set aside to infuse.
- Make the whipped brie: In a food processor, combine softened Brie and heavy cream. Blend until smooth and creamy. Season with a pinch of salt. Transfer to a piping bag or bowl.
- Grill the peaches: Preheat grill or grill pan to medium-high heat. Lightly oil the cut side of the peaches. Place peach halves cut-side down on grill. Cook for 3-4 minutes until grill marks appear and peaches are slightly softened. Flip and cook for another 1-2 minutes. Remove from grill.
- Assemble: Place each grilled peach round on a serving plate. Pipe or dollop whipped brie onto the center of each peach.
- Drizzle hot honey over the brie-topped peaches.
- Sprinkle chopped pistachios on top. Garnish with fresh mint if desired. Serve warm.
Notes
You can customize the seasonings to taste. For a milder heat, reduce red pepper flakes. For extra crunch, toast pistachios lightly before chopping.
