For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 large egg
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • For the Glaze: 1 cup powdered sugar, 2 tablespoons fresh lemon juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and powdered sugar until light and fluffy.
  3. Beat in egg, lemon juice, and lemon zest until well combined.
  4. In a separate bowl, whisk together flour and salt. Gradually add to butter mixture, mixing until just combined.
  5. Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  6. Bake for 10-12 minutes, or until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  7. For the glaze, whisk together powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.

Notes

You can customize the seasonings to taste. For a more intense lemon flavor, add extra zest. For a less sweet cookie, reduce powdered sugar in dough to 3/4 cup.
